Preparation
- Grate the oranges to measure 2 tablespoons zest; set the oranges aside. Stir together the sugar and grated zest in a bowl. Using your fingers, rub the zest into the sugar for about 1 minute, or until the mixture looks cohesive and is aromatic. Set aside.
- Cut the oranges in half crosswise. Cut out the orange flesh from the rinds, and reserve the rinds for serving.
- Squeeze the orange flesh over a fine mesh strainer set over a bowl or measuring glass; discard any seeds. Measure ⅓ cup of the squeezed juice, and set aside for the cream mixture. Reserve any remaining juice for a separate use. Discard the squeezed orange flesh.
- Place the heavy cream, salt, and orange sugar in a medium pot; stir to combine. Bring to a simmer over medium heat. Remove from heat, and immediately stir in the ⅓ cup orange juice. Pour the mixture through a fine mesh strainer into a pourable glass; discard the solids. Immediately pour the strained mixture into the reserved orange rinds.
- Arrange the filled orange rinds on a baking sheet or plate, and cover them. Refrigerate until the filling has solidified, for at least 4 hours or up to 24 hours.
- If desired, top with grated dark chocolate and fresh fruit. Serve immediately, or store, covered, in the refrigerator for up to an additional 24 hours.
