Orange posset is a silky, citrus-forward British dessert made with fresh orange juice, zest-infused cream, and sugar for a naturally thickened, custard-like texture without eggs or gelatin. Ingredients

  • 4 oranges
  • ⅓ cup sugar
  • 1 cup heavy cream
  • 1 teaspoon kosher salt
  • Grated dark chocolate (optional)
  • Fresh berries (optional)

Preparation

  1. Grate the oranges to measure 2 tablespoons zest; set the oranges aside. Stir together the sugar and grated zest in a bowl. Using your fingers, rub the zest into the sugar for about 1 minute, or until the mixture looks cohesive and is aromatic. Set aside.
  2. Cut the oranges in half crosswise. Cut out the orange flesh from the rinds, and reserve the rinds for serving.
  3. Squeeze the orange flesh over a fine mesh strainer set over a bowl or measuring glass; discard any seeds. Measure ⅓ cup of the squeezed juice, and set aside for the cream mixture. Reserve any remaining juice for a separate use. Discard the squeezed orange flesh.
  4. Place the heavy cream, salt, and orange sugar in a medium pot; stir to combine. Bring to a simmer over medium heat. Remove from heat, and immediately stir in the ⅓ cup orange juice. Pour the mixture through a fine mesh strainer into a pourable glass; discard the solids. Immediately pour the strained mixture into the reserved orange rinds.
  5. Arrange the filled orange rinds on a baking sheet or plate, and cover them. Refrigerate until the filling has solidified, for at least 4 hours or up to 24 hours.
  6. If desired, top with grated dark chocolate and fresh fruit. Serve immediately, or store, covered, in the refrigerator for up to an additional 24 hours.
