Ingredients

for 1 serving

  • 1 tablespoon freshly pressed ginger juice (storebought or homemade)
  • 1 cup whole milk
  • 2 teaspoons granulated sugar (optional)
  • Honey or brown sugar simple syrup, for serving (optional)

Preparation

  1. Place the ginger juice in a heatproof 4-to-6-inch bowl. Set aside.
  2. Bring the milk to a simmer in a small pot over medium-low heat. If desired, stir in the granulated sugar.
  3. Immediately pour the milk into the bowl with the ginger juice. Cover, and let stand at room temperature for 10–15 minutes, until the milk has solidified into a soft jelly.
  4. If desired, top the milk curd with honey or brown sugar simple syrup. Serve immediately, or store, covered, in the refrigerator for up to 24 hours.
