- 1 tablespoon freshly pressed ginger juice (storebought or homemade)
- 1 cup whole milk
- 2 teaspoons granulated sugar (optional)
- Honey or brown sugar simple syrup, for serving (optional)

Preparation
- Place the ginger juice in a heatproof 4-to-6-inch bowl. Set aside.
- Bring the milk to a simmer in a small pot over medium-low heat. If desired, stir in the granulated sugar.
- Immediately pour the milk into the bowl with the ginger juice. Cover, and let stand at room temperature for 10–15 minutes, until the milk has solidified into a soft jelly.
- If desired, top the milk curd with honey or brown sugar simple syrup. Serve immediately, or store, covered, in the refrigerator for up to 24 hours.
