Ingredients

for 20 shots

  • ½ cup cold water
  • 1 ¼ oz unflavored gelatin
  • 1 cup champagne or prosecco
  • ¼ cup granulated sugar
  • ½ cup vodka, plain or citrus-flavored
  • 1 teaspoon fresh lemon juice
  • 1 pinch edible gold glitter

Preparation

  1. Pour cold water into a small bowl, and sprinkle the gelatin over the surface. Let the mixture sit for 5 minutes to allow the gelatin to bloom. Set aside.
  2. Meanwhile, pour the champagne and sugar into a small saucepan, and place it over low heat. Warm the mixture for 3–5 minutes, stirring frequently, or until the sugar is completely dissolved; do not allow the mixture to boil. Turn off the heat.
  3. Add the bloomed gelatin and water mixture and whisk until fully dissolved. Stir in the vodka, lemon juice, and edible gold glitter, if using.
  4. Pour the mixture evenly into mini jello shot cups; depending on how filled they are, you’ll end up with 15–20 shots. Let the shots set in the refrigerator for at least 5 hours, or overnight for the best texture.
