Ingredients

- ½ cup cold water
- 1 ¼ oz unflavored gelatin
- 1 cup champagne or prosecco
- ¼ cup granulated sugar
- ½ cup vodka, plain or citrus-flavored
- 1 teaspoon fresh lemon juice
- 1 pinch edible gold glitter

Preparation
- Pour cold water into a small bowl, and sprinkle the gelatin over the surface. Let the mixture sit for 5 minutes to allow the gelatin to bloom. Set aside.
- Meanwhile, pour the champagne and sugar into a small saucepan, and place it over low heat. Warm the mixture for 3–5 minutes, stirring frequently, or until the sugar is completely dissolved; do not allow the mixture to boil. Turn off the heat.
- Add the bloomed gelatin and water mixture and whisk until fully dissolved. Stir in the vodka, lemon juice, and edible gold glitter, if using.
- Pour the mixture evenly into mini jello shot cups; depending on how filled they are, you’ll end up with 15–20 shots. Let the shots set in the refrigerator for at least 5 hours, or overnight for the best texture.
