Earl Grey Cream:

  • 2 individual Earl Grey tea bags
  • ¼ cup boiling water
  • 2 teaspoons light brown sugar
  • ⅓ cup heavy cream

Matcha:

  • 3 tablespoons hot water
  • 2 teaspoons high-quality matcha powder

Preparation

  1. Make the Earl Grey cream: Place the tea bags in a heat-safe cup, and pour the boiling water over. Let steep, covered, for 2 minutes. Remove and discard the tea bags. Stir the brown sugar into the tea until the sugar has dissolved. Place in the refrigerator until chilled, about 10 minutes.
  2. Add the heavy cream to the cooled tea mixture. Using an electric whisk, whisk the mixture together until thickened and creamy, about 2 minutes. Place in the refrigerator until ready to use.
  3. Make the matcha: Whisk together the hot water and matcha powder in a small bowl until all the large bubbles are dissolved, about 2 minutes.
  4. Fill a 16-ounce mason jar three-fourths full with ice. Stir in your sweetener of choice. Pour in the milk. Pour the matcha over the milk, and immediately top the drink to the brim of the glass with the Earl Grey cream. (Any leftover Earl Grey cream may be stored in the refrigerator for up to 24 hours.) Stir the drink, and serve immediately.
