Sizzling Cheeseburger
This viral cheese fondue burger features smashed beef patties stacked on a brioche bun, then dunked directly into a bubbling skillet of molten cheese sauce. Finished with yum yum sauce, fried garlic, and crispy onions, it’s an over-the-top, restaurant-style burger built for dramatic cheese pulls and maximum delight.

Ingredients
for 1 serving
Yum Yum Sauce:
- ½ cup mayonnaise
- 2 tablespoons unsalted butter, melted and cooled
- 1 tablespoon tomato paste
- ½ tablespoon granulated sugar
- 1 teaspoon unseasoned rice vinegar
- 1 teaspoon garlic powder
- ¾ teaspoon paprika
Cheese Sauce:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups evaporated milk
- 1 cup shredded white cheddar cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 1 teaspoon dijon mustard
- kosher salt, to taste
Burgers:
- avocado oil, for cooking
- 3 (2-ounce) 80/20% ground beef pattys
- kosher salt, to taste
- freshly ground black pepper, to taste
- 3 slices american cheese
- 1 tablespoon ketchup
- 1 brioche bun, split
Additional Ingredients:
- 1 tablespoon fried garlic
- 1 tablespoon Fried Onions
Preparation
- Make the yum yum sauce: Whisk together the mayonnaise, butter, tomato paste, sugar, rice vinegar, garlic powder, and paprika in a small bowl until smooth. Refrigerate until ready to use.
- Make the cheese sauce: Melt the butter in a medium saucepan over medium heat. Add the flour, and cook, whisking constantly, until light golden, about 1 minute. Slowly whisk in the milk, and cook, whisking often, until thickened and smooth, 3–5 minutes. Reduce the heat to low, and add the cheddar, mozzarella, Parmesan, and mustard, stirring until fully melted and glossy. Season with salt to taste. Cover, and keep warm over low heat.
- Make the burgers: Heat a thin layer of avocado oil in a cast-iron skillet or griddle over high. Season the patties generously with salt and pepper, and smash them directly onto the hot surface. Cook until deeply browned and crispy on the first side, 1–2 minutes. Flip the patties, and top each with a slice of American cheese. Cook just until melted, about 1 minute. Remove from heat.
- Spread the ketchup and 1 tablespoon yum yum sauce over the cut sides of the bun. Stack the burgers inside. Set aside. (The remaining yum yum sauce can be stored in an airtight container in the refrigerator for up to 1 week.)
- Heat a cast-iron fajita pan over a high gas flame for about 5 minutes, or until extremely hot.
- Carefully pour the hot cheese sauce into the hot fajita pan, and let it bubble vigorously. Immediately sprinkle the fried garlic and fried onions over the cheese sauce.
- Cut the assembled burger in half, and place both halves, cut side down, directly in the bubbling cheese sauce. Serve immediately from the pan while hot and molten.
