  • 4 ripe mangoes, divided
  • 2 tablespoons chopped white chocolate
  • 1 (12-ounce) package silken tofu, drained
  • 4 tablespoons sweetened condensed milk

Preparation

  1. Cut the flesh from 3 of the mangoes and add it to a blender. Add the flesh from the remaining mango to a cutting board and cut into bite-sized pieces. Set the mango pieces aside.
  2. Blend the mango flesh until smooth and pureed, about 30 seconds. Transfer the puree to a medium bowl and set aside.
  3. Divide the reserved mango pieces evenly between 2 serving cups. Set aside.
  4. Add the white chocolate to a small microwave-safe bowl. Microwave in 15-second intervals, stirring between each, until fully melted, about 30 seconds total. Set aside.
  5. Add the silken tofu, mango puree, melted white chocolate, and condensed milk to the blender. Blend until completely smooth, about 30 seconds.
  6. Pour the mousse evenly over the mango pieces in the serving cups. Cover each cup with plastic wrap and refrigerate for at least 12 hours, or overnight, until set. The mousse can be stored in the refrigerator for up to 2 days.
