Scandinavian Egg Coffee
Scandinavian egg coffee is a traditional Nordic brew that creates a smooth, rich cup of coffee with a clean, mild flavor. By combining eggs, shells, and medium-ground coffee, the mixture binds coffee grounds during simmering, resulting in a clarified, full-bodied coffee with a naturally silky texture. This method produces a distinctive, aromatic coffee that’s both visually unique and deliciously drinkable, perfect for coffee lovers seeking a classic Scandinavian twist.

Preparation
- Bring the water to a boil in a small saucepan over high heat.
- Crack the eggs into a small bowl, leaving the shells in the bowl as well. Add the coffee. Stir together until the grounds, eggs, and shells are combined (the mixture will resemble a thick, clumpy paste).
- Add the egg mixture to the boiling water, and stir once. Reduce the heat to medium, and simmer, undisturbed, for 3–4 minutes, until the eggs bind with the grounds and rise to the surface. Remove from heat. Let the mixture stand for about 1 minute, until the grounds settle in the bottom of the pan.
- Place 2 small fine-mesh strainers, stacked one on top of each other, directly over a mug. Carefully ladle the coffee-egg mixture into the double strainers. Gently press down on the mixture to help the coffee pass through until your mug is nearly full. Discard the strained solids. Serve.
- Enjoy!
