Mayak eggs are Korean soy-marinated jammy eggs soaked in a savory, garlicky soy sauce mixture with scallions and fresh chiles for bold, deeply layered flavor. The soft centers absorb the sweet-salty marinade while staying rich and creamy, making each bite intensely satisfying. After a simple overnight soak, the eggs develop their signature intensely savory taste and glossy finish. Ingredients

for 6 servings

  • 6 large eggs
  • ⅔ cup soy sauce
  • ½ cup water
  • ¼ cup brown rice syrup
  • 3 garlic cloves, minced
  • 3 scallions, sliced
  • ⅓ cup diced white onion (from 1 onion)
  • 1 Korean green chili pepper, unseeded and chopped
  • 2 Thai red chiles, unseeded and chopped
  • 1 tablespoon toasted sesame seeds
  • cooked rice, for serving (optional)

Preparation

  1. Bring a medium pot filled with water to a rolling boil over high heat. Carefully lower in the eggs, and cook over medium-high heat for 6 minutes for jammy centers.
  2. Remove the pot from heat, and immediately transfer the eggs to a bowl filled with ice water. Let them stand until completely cooled, 5–10 minutes. Peel the eggs and set aside.
  3. Whisk together the soy sauce, water, and rice syrup in a medium bowl until combined. Add the garlic, scallions, onion, Korean green pepper, Thai chiles, and sesame seeds. Stir to combine.
  4. Gently place the peeled eggs in the marinade, making sure they are fully submerged. Cover and refrigerate for at least 8 hours or up to 12 hours.
  5. Remove the eggs from the marinade, and cut them in half lengthwise. Divide the eggs evenly among 6 bowls (overcooked rice, if desired), and spoon some of the marinade mixture over the top. Serve.
