Ingredients

Earl Grey Cream:
- 2 cups heavy cream, chilled
- 4 individual Earl Grey tea bags, cut open
- 1 cup powdered sugar, or to taste
- 2 teaspoons vanilla extract
- 1 teaspoon kosher salt
- 8 oz mascarpone cheese
Matcha Mixture:
- ¾ cup hot water
- 2 tablespoons plus 2 teaspoons high-quality matcha powder
Additional Ingredients:
- 1 (7-ounce) package ladyfinger
- 2 tablespoons sifted high-quality matcha powder

Preparation
- Make the Earl Grey cream: Place the heavy cream and contents of the tea bags in a small pot. Bring to a very gentle simmer over medium-low heat. Remove from heat, and let the mixture steep, uncovered, for 15 minutes. Pour the mixture into a bowl. Let cool at room temperature for 10 minutes. Transfer to the refrigerator, and let cool completely, about 2 hours.
- Place the chilled cream mixture in a large stand mixer bowl fitted with the whisk attachment, and sift in the powdered sugar. Beat on high speed for about 5 minutes, or until medium peaks form. Add the vanilla and salt, and beat on medium-high speed for about 1 minute, or until stiff peaks form. Using a spatula, fold in the mascarpone cheese until the mixture is fully combined and glossy. Set aside, covered, in the refrigerator until ready to use.
- Make the matcha mixture: Whisk together the hot water and matcha powder in a small bowl until all the large bubbles are dissolved, about 2 minutes. Pour the mixture into a bowl wide enough to dip ladyfingers in.
- Working with 1 ladyfinger at a time, dip each cookie in the water-matcha mixture, and immediately transfer each dipped cookie to a 6 x 8-inch or other sized glass container, arranging the cookies next to each other until the entire bottom of the container is filled. Spread one-third of the Earl Grey cream evenly over the cookies. Repeat the process with the remaining matcha mixture, ladyfingers, and Earl Grey cream.
- Dust the sifted matcha powder evenly over the top of the assembled tiramisu. Cover with plastic wrap, and refrigerate until softened, at least 6 hours or up to 12 hours. Uncover and serve.
