Preparation

  1. Make the Earl Grey cream: Place the heavy cream and contents of the tea bags in a small pot. Bring to a very gentle simmer over medium-low heat. Remove from heat, and let the mixture steep, uncovered, for 15 minutes. Pour the mixture into a bowl. Let cool at room temperature for 10 minutes. Transfer to the refrigerator, and let cool completely, about 2 hours.
  2. Place the chilled cream mixture in a large stand mixer bowl fitted with the whisk attachment, and sift in the powdered sugar. Beat on high speed for about 5 minutes, or until medium peaks form. Add the vanilla and salt, and beat on medium-high speed for about 1 minute, or until stiff peaks form. Using a spatula, fold in the mascarpone cheese until the mixture is fully combined and glossy. Set aside, covered, in the refrigerator until ready to use.
  3. Make the matcha mixture: Whisk together the hot water and matcha powder in a small bowl until all the large bubbles are dissolved, about 2 minutes. Pour the mixture into a bowl wide enough to dip ladyfingers in.
  4. Working with 1 ladyfinger at a time, dip each cookie in the water-matcha mixture, and immediately transfer each dipped cookie to a 6 x 8-inch or other sized glass container, arranging the cookies next to each other until the entire bottom of the container is filled. Spread one-third of the Earl Grey cream evenly over the cookies. Repeat the process with the remaining matcha mixture, ladyfingers, and Earl Grey cream.
  5. Dust the sifted matcha powder evenly over the top of the assembled tiramisu. Cover with plastic wrap, and refrigerate until softened, at least 6 hours or up to 12 hours. Uncover and serve.
  6. Enjoy!
