  • 3 tablespoons chili oil
  • 2 tablespoons fried shallots
  • 1 tablespoon soy sauce
  • 2 teaspoons black vinegar
  • 1 teaspoon ground black pepper or Sichuan peppercorns
  • 1 teaspoon toasted white sesame seeds
  • 1 teaspoon black sesame seeds
  • 1 teaspoon sugar
  • 2 scallions, sliced
  • 1 small clove garlic, grated
  • large english cucumber, cut into ¼-inch slices

Preparation

  1. Place the peanut sauce, chili oil, fried shallots, soy sauce, vinegar, pepper, white and black sesame seeds, sugar, scallions, and garlic in a pint-sized lidded container. Secure the lid, and shake for about 20 seconds, or until the sauce is well combined.
  2. Add the cucumbers to the sauce in the container. Secure the lid, and shake for about 1 minute, or until the cucumbers are evenly coated.
  3. Serve immediately, or store in an airtight container in the refrigerator fridge for up to 4 hours.
