- 3 tablespoons chili oil
- 2 tablespoons fried shallots
- 1 tablespoon soy sauce
- 2 teaspoons black vinegar
- 1 teaspoon ground black pepper or Sichuan peppercorns
- 1 teaspoon toasted white sesame seeds
- 1 teaspoon black sesame seeds
- 1 teaspoon sugar
- 2 scallions, sliced
- 1 small clove garlic, grated
- large english cucumber, cut into ¼-inch slices

Preparation
- Place the peanut sauce, chili oil, fried shallots, soy sauce, vinegar, pepper, white and black sesame seeds, sugar, scallions, and garlic in a pint-sized lidded container. Secure the lid, and shake for about 20 seconds, or until the sauce is well combined.
- Add the cucumbers to the sauce in the container. Secure the lid, and shake for about 1 minute, or until the cucumbers are evenly coated.
- Serve immediately, or store in an airtight container in the refrigerator fridge for up to 4 hours.
