Ingredients
for 1 serving
Stir-Fry Sauce
- 2 tablespoons mirin
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon worcestershire sauce
- 1 teaspoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon granulated sugar
- ½ tablespoon sake
- ½ tablespoon dark soy sauce
Noodles and Stir-Fry
- 8 ¾ oz pork belly (250 g), thinly sliced
- 5 dried shiitake mushrooms, rehydrated and sliced
- ½ white onion, thinly sliced
- 1 carrot, thinly sliced into matchsticks
- 1 head bok choy, roughly chopped
- vegetable oil, as needed
- 2 packages of fresh or frozen udon noodles
- scallion, green parts only, thinly sliced, for garnish
- white sesame seed, for garnish
Preparation
- In a small bowl, whisk together the mirin, soy sauce, oyster sauce, Worcestershire sauce, rice vinegar, sesame oil, sugar, sake, and dark soy sauce until the sugar dissolves. Set aside.
- Bring a large pot of water to a boil over high heat. Add the udon noodles and cook for 1 to 2 minutes, until just tender. Drain and set aside.
- Heat a drizzle of vegetable oil in a large nonstick skillet or wok over medium-high heat. Add the pork belly and cook for 5 minutes, turning occasionally, until browned and cooked through.
- Add the shiitake mushrooms, onion, carrot, and bok choy to the skillet. Cook, stirring frequently, for 2 minutes, until the vegetables are just tender.
- Add the cooked udon noodles and the stir-fry sauce to the skillet. Toss everything together and stir-fry for 1 to 2 minutes, until the noodles are well coated and heated through. Serve topped with scallions and sesame seeds.
